Chewy Chocolate Chip Cookies – the ultimate in baking

ok, maybe not for you – but for my kids, a chewy chocolate chip cookie is at the top of the food chain! Here’s the wonderful recipe -

2 cups plus 2 T flour

1/2 t baking soda

1/2 t salt

12 Tablespoons butter ( 1 1/2 sticks)

1 cup brown sugar

1/2 cup white sugar

1 large egg

1 egg yolk

2 t vanilla extract

1 2/2 cups chocolate chips

1. Preheat oven to 325 degrees. line baking sheet with parchment paper.

2. Melt butter. put in large bowl and mix with sugars (use an electric mixer). Add eggs and vanilla. Beat just until combined.

3. Add dry ingredients and beat until just combined.

4. Add chocolate chips.

AND HERE’S THE TRICK:

Roll 1/4 cup dough (yes 1/4 cup, use a measuring cup to make sure) into a ball. pull into two equal halves. Join the halves with the jagged edges facing up. Do NOT smooth the uneven surface. Put on the parchment paper with the jagged edges facing up. You can cook 6 to a cookie sheet.

Bake for 10 minutes then rotate pan and cook for another 6-8 minutes depending on your stove (and how chewy you really want the cookies).

Pour a glass of milk. Eat cookie. Enjoy!
