There’s nothing fishy here – using fish sauce to season your food

According to Wikipedia, fish sauce  is a condiment that is derived from fish that have been allowed to ferment.  Sounds gross, doesn’t it?

Actually, fish sauce is great  – it’s a  low fat, very flavorful all-purpose seasoning.  Different Asisan countries have different ways of making it -  some are made from raw fish, others from dried fish, some from only a single species; some contain only fish and salt, others add a variety of herbs and spices.

I really like the Premium FIsh Sauce by Thai Kitchen.  There’s an easy recipe for Traditional Thai Dipping Sauce on the back that is really good to use for all kinds of things – a cru d’ete dip, sprinkle over freshly steamed veggies, as a sauce for rice or (surprise!) fish…..here it is, enjoy!

In a bowl, combine 1 minced serrano chile, 1 clove of minced garlic, 3 tablespoons sugar, 2/3 cup water, 1 1/2 tablespoons of fresh lime juice, and 5 tablespoons of Fish Sauce.  Stir well to dissolve the sugar.

    It took me several years of seeing fish sauce in recipes to finally go out and buy some. It’s so versatile! I love it, especially since I can’t eat soy sauce—it subs in nicely in a variety of recipes.
