On Sunday August 23, 2009 Mama Says held a contest with Jason Sadler’s www.iwearyourshirt.com to promote the notion that in the time it takes to order and receive a pizza – you can prepare a nutritious and delicious meal; which is better for your wallet, waistline and taste buds!

We invited our readers to submit the name of their favorite “Mom” made dish in the comment section of our blog.  The responses were stellar! A heartfelt thanks to those who participated for taking a moment to share their favorite homemade dish — and food memories.

The winner, drawn at random from the comment entries, is Kelani I. Feliciano from Hawaii.  She submitted the following comment:

My Mama’s Pumpkin Crunch makes the Holidays “the Most Wonderful Time of the Year.”
Note: It’s already Autumn, pumpkins are almost in season, and the Holidays are around the corner! Mmm!

Mama’s Pumpkin Crunch Recipe

Ingredients:
1 large can pumpkin (not the pie filling)
1 large can evaporated milk
3 eggs
1 cup sugar
2 teaspoons cinnamon
1 box dry Yellow Cake mix
1 block (1/2 cup) butter, melted
1 cup walnuts, chopped

Frosting:
2 Block cream cheese
1/2 cup sugar
Directions:
  1. Preheat oven to 350 degrees.
  2. Make frosting; blend cream cheese and sugar well and set aside.
  3. Line 9×13 inch pan with wax paper.
  4. Mix: pumpkin, evaporated milk, eggs, sugar and cinnamon in a medium bowl.
  5. Pour mixture into prepared pan.
  6. Sprinkle dry cake mix over pumpkin mixture evenly.
  7. Drizzle melted butter over cake mix topping.
  8. Drop evenly + gently press chopped walnuts into topping.
  9. Bake for 60 min or until cake topping is golden brown.
  10. When cool, invert onto a large platter, then frost* and Enjoy!
