North Georgia Brook Trout – grilled to perfection

We decided to forego the usual hot dogs and hamburgers this Labor Day weekend, and grill some fresh North Georgia Brook trout instead.  Fresh from the pond, and thanks to Lynn Sawicki of Sawicki’s Meat*Seafood*More in Decatur, GA, we took 3 beautiful trout out of the refrigerator on Monday evening.

Trout is really easy to grill.  I stuff it with a few slices of lemon, a couple of cloves and garlic, and a bunch of fresh flat leaf Italian parsley.  I used a toothpick to hold the fish together so when I flipped it on the grill, it wouldn’t open up.

It’s really important to have a SUPER CLEAN grill when you cook, so I cleaned it while it was cold, then sprayed the grates with some Pam Cooking Spray. Turned the heat on, let it warm up to about 425 degrees, then on went the trout.  6 minutes on one side, 6 on the other…..and voila, perfectly grilled North Georgia brook trout.
