Nana’s Tuna Salad Recipe
My mother-in-law makes a tuna salad that the entire family (great-grandchildren through her children) relishes. They’ll drive miles to satisfy their craving around her kitchen table and she watches with delight at their appetite and company. The recipe is surprising simple yet yields a mouthwatering meal. She makes her signature tuna salad in a KichenAid stand mixer so the consistency is that of a silky mouse. It is wonderful on top of a garden salad, served in a lettuce cup, in a sandwich or as a snack with crackers. When someone in the family is feeling under-the-weather, Nana whips up a batch of tuna with a personal prescription to eat a scoop on a baked potato – her recipe for good health.
Nana’s Tuna Salad
Ingredients
- 3 (6 ounce) can tuna, drained
- 1/2 cup mayonnaise (she prefers Hain Safflower)
- juice from one lemon
- 1 hard-boiled egg
Directions
1. In a KitchenAid mixer bowl, combine the tuna, mayonnaise, egg and lemon juice. Mix until well incorporated (it’s done when you can’t identify flecks of the egg) and refrigerate until chilled. Salt and pepper to taste.
