Heart Healthy Salad for Valentines Day
Sunday, February 14th, 2010Quick to make, delicious to eat….and so good for you and your sweetie!
HEART HEALTHY SALAD4 cups shredded cabbage, mixed red and green
1/2 medium English cucumber (or 2 pickling cucumbers) thinly sliced
1/2 medium red onion, thinly sliced
1 medium green pepper, thinly sliced
3 carrots, shredded
1/2 t salt
1/2 t black pepper
2 T sugar
2 1/2 T apple cider vinegar
1 T olive oil
1 T water
Mix the vegetables in a large bowl and set aside. Combine the remaining ingredients, mix well, and pour over vegetables. Toss the vegetables once or twice and refrigerate.
